Cranberry Curd Topped with Christmas Gin Custard

A flavourful and tart cranberry curd, paired with a creamy gin-infused vegan custard - perfect for the holidays!
Cranberry Curd Topped with Christmas Gin Custard
Makes 4-6 Servings
Ingredients
Cranberry Curd
5 cups fresh cranberries
1 cup sugar
Zest and juice from 1 orange
1 cup coconut milk
zest from 1 lemon
1 tsp agar agar or 1 pouch of Dr. Oetker Vegan Gelling Powder
Christmas Gin Custard
1 1/2 cups of coconut milk
2 tbsp cornstarch (I used arrowroot powder)
1/2 cup sugar
1/4 cup coconut oil
2 ounces of Eau Claire Christmas Gin
1/2 tsp vanilla extract
Cookie Crumb Base
1/2 a pack of Biscoff biscuits
Directions
Cranberry Curd
In a medium sauce pan over high heat, combine the fresh cranberries, sugar, zest and juice from an orange and bring to a boil.
Reduce and let it simmer for 10 minutes, then remove from heat and let it cool completely.
In a blender, add the cooled cranberry mixture, zest from 1 lemon and the agar agar or vegan gelling powder. Blitz until thoroughly combined.
Christmas Gin Custard
In a medium sauce pan over high heat, add coconut milk and cornstarch and whisk to thoroughly combine - no lumps!
Add the rest of the custard ingredients bring to a rolling boil, whisking constantly.
Reduce to a simmer and continue whisking until the mixture begins to thicken, about 10-15 minutes.
Remove from heat and let it cool.
Cookie Crumb Base
Blitz the cookies in a food process until crumbly.
Assemble the Dessert
Spoon a couple tablespoons of the cookie crumbs into your serving bowls and gently press down to flatten as much as possible.
Pour the cranberry curd on top of the cookie base, divided equally among your serving dishes.
Let the cranberry curd set in the fridge for 10-15 minutes before adding the custard.
Once the curd is set, top with the Christmas Gin Custard and garnish with mint leaves and fresh cranberries.
Store in fridge until ready to serve.
