Smoked BBQ Jackfruit Tacos 100% Vegan

Smoked BBQ Jackfruit Tacos with an Avocado Ranch Dressing
Ingredients
Corn tortillas
Filling
2 cans of young jackfruit in brine or water (not syrup)
1/2 yellow onion, thinly sliced
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
2 tablespoons coconut sugar
Bottle of favourite vegan BBQ sauce
Avocado Ranch Dressing
1/2 an avocado
1/2 cup vegan sour cream or mayonnaise
2 tbsp non-dariy milk of choice
1/2 tsp apple cider vinegar
1/2 tsp white pepper
1/4 tsp pink Himalayan salt
1/2 tsp onion powder
1/2 tbsp dill
1/2 tbsp parsley
1/2 tbsp cilantro

Make it your own
Chopped roma tomatoes
Diced cucumber
Chopped purple cabbage
Leafy greens of choice - I'm using beet greens
Cilantro, optional
Directions
Prepare filling
- Drain and rinse the jackfruit. Chop off the hard centers and discard them.
- In a large skillet over medium, sauté the onions for 2-3 minutes. Add the jackfruit and cook for 4 more minutes.
- Add the BBQ sauce, enough to cover and a bit more. Add a splash of water, stir to combine.
- Cover and let it simmer on low for 45 minutes to an hour.
Prepare dressing
- In a food processor or blender, add all filling ingredients except the herbs and spices. Blend until smooth.
- Add the rest of the herbs and spices and blitz for 30-40 seconds.
- Place in the fridge until ready to use.
Prepare tacos
- In a small skillet over med-low heat, lightly oil pan.
- Place a tortilla in the skillet and heat until it starts to bubble, 2-4 minutes. Flip in between so you don't burn one side.
- Remove tortilla and place on cutting board and fold it in half. Let it cool while you heat the next one.
- Once your tortillias are ready, add can build your tacos! Drizzle the avocado ranch dressing over your tacos and serve.
